You need ROSE PETAL JAM in your life. It's pectin- and gelatin-free and it's made from fresh rose petals right out of the garden. It's a bit thinner in consistency than traditional jam but also makes a great sauce over ice cream or cheesecake.
Ingredients 1.5 cups water 2 cups fresh rose petals 2 cups sugar 3 Tablespoons lemon juice 2 Tablespoons chia seeds Directions Combine water and rose petals in a small pot. Simmer for ten minutes. Add sugar and lemon juice, stir, and simmer for five minutes. Add chia seeds and simmer for 15 minutes more. Add to sterilized jars while hot and apply lids. Store in the refrigerator for up to five days. This is NOT a canning recipe for shelf storage. |
