Fermenting your own red wine vinegar is so easy and requires no special skills. All you need is a clean crock or glass container, a SCOBY or mother, and red wine. Over the timespan of a few weeks, the mother will consume the sugar and convert it into red wine vinegar. Homemade red wine vinegar is loaded with probiotics and antioxidants. I use mine in salad dressings or soups such as Pasta Fagioli.
Note the size and thickness of scobies will vary as each batch is sightly different. Your mother will arrive in a ziploc bag with enough liquid to safely make it on its journey through the mail. Follow the included instructions to feed and watch your scoby grow as it ferments your wine into vinegar.
